I've downloaded and installed the XXL version of POC, but there doesn't seem to be any documentation included with it, so I have some questions:

1. Do I want high corrosion factor or low corrosion factor? It is not at all clear to me what is best.

2. What do all these abreviations mean: BRT; TEU, DWT, GT. And what's a "reefer"?

3. Do all ships have refrigeration equipment? If not, how can I see which ones do have it? And will the game let me "charter" a load of cargo that requires refrigeration even if my ship can't keep it cold?

4. What do each of the various levels of maintenance do?

5. What determines my Status? How do I increase it? What can cause it to decrease?

I'd like to know, in some depth, how the game works. I'm not going to make spreadsheets and all that, but a basic idea of the "mechanics" is really necessary in order to make good choices and enjoy playing the game, and I don't have this, and apart from asking in here I'm not at all sure where I can get it.

Low

2. What do all these abreviations mean: BRT; TEU, DWT, GT. And what's a "reefer"?

BRT =GrossRegisterTons (not a weight); TEU =TwentyfootEquivalent Unit (container)
GT = same as BRT or GRT
DWT (TDW) Tons Dead Weight = roughly the pay load

3. Do all ships have refrigeration equipment? If not, how can I see which ones do have it? And will the game let me "charter" a load of cargo that requires refrigeration even if my ship can't keep it cold?

No.
Reefer = refrigerated ship, yes the game will if it is a bulker, no the game won't if it is a container ship

4. What do each of the various levels of maintenance do?

Keeps your ship in top shape (premium) and avoid having to constantly stop at a yard for repair (or sink) the ship condition does deteriorate during the game.Keeping the ship condition above 80% will allow you to drive through storms without damage.

5. What determines my Status? How do I increase it? What can cause it to decrease?

Not picking up reserved freight will hurt your points, as will a few other things.
Doing the 1st 20 harbors in manual (2Dsim) will gain you 20 points at no cost, buying ships gains points. Also you need a minimum of 10 points to reserve partial cargo's

Most of it you can get in these forums, some is plain playing the game to find your own style, and welcome to the game and Forum Very Happy

I realize this. I was asking for specifics. In particular the difference between the four levels of maintenance.

Zero maincenance costs nothing. Then there's minimal maintenance, and there's one level better which costs double, another level which costs triple, and another level again which costs four times as much as miminal maintenance.

But what does each do, in terms of numbers? Is the relationship linear? (I'd assume it isn't, because at the very least fuel consumption vs speed is not linear, and so it would surprise me if a lot of other things in the game were).

its almost linear (on the cost), but on a very good maintainance, there is a better service, that means if the shipcondition get very low, a fast repair is done automatically, which might save your ship. SO the different steps have different algorithms.

You can download a somewhat outdated manual here:
http://www.portsofcall.de/xxl/manxxlus.pdf

That should get you on track.
